I don't have a picture and this isn't even much of a recipe but it's really good for an easy, cheap meal. It makes a lot.
2 lbs. meat (we do half beef, half chicken sometimes)
1 bag cheese (2 cups)
corn tortillas (or flour)
1 onion
1 can fire roasted tomatoes (15 oz is the small can I think)
1 can Rotel
Cook the meat. Sautee the onion. Season with salt, pepper, cumin, whatever you want. Stir in the 2 cans.
Then assemble the enchiladas (I usually just layer like a lasagna because, well, it's easier). Sprinkle the cheese on top and melt it all in the oven.
